In the Vineyard

Naturally, the emphasis here is on the soil and not on perfectly pruned leaves or trimmed greenery. Weeds which attract useful insects and later convert into humus for the soil are beneficial and allowed. Rather than undergoing mineral fertilization, the vines themselves must extract the minerality out of the slate soils. So the grapes - and later, the wine – develop the terroir-typical taste.
